Get cooking with Peter Weber’s favorite mom-approved recipes for an unforgettable toast to your leading lady. These picks are equal parts simple and sure-to-impress. Red Snapper (Cuban Pargo) 

  • 6 tbsp olive oil
  • 2 bay leaves
  • 2 cups thinly sliced onion
  • 1 tbsp crushed garlic 
  • 1 red pepper, thinly sliced
  • 2 cups of crushed tomatoes 
  • 2 tbsp tomato paste 
  • Salt & pepper to taste 
  • 2 lbs red snapper fillets 

Sauté onion, garlic, and peppers in olive oil over medium heat for 6-8 minutes. Add salt and pepper to taste. Cook for 10 minutes over low-to-medium heat. Add snapper fillets and cook for 4 minutes. Flip fillets and cook for another 4 minutes.

 

 

Picadillo a la Cubana 

  • 1 lb ground beef 
  • 2 tbsp olive oil 
  • 1 medium yellow onion, diced 
  • 6 garlic cloves, finely chopped
  • 1/2 bell pepper, diced
  • 1 tbsp ground cumin
  • 3 red potatoes, peeled & diced 
  • 1/2 cup green olives 
  • 1/2 cup raisins
  • 16 oz of tomato sauce
  • Salt & pepper to taste 

In a frying pan brown the beef with a dash of cumin & pepper. Drain excess grease. In a larger frying pan heat 2 tbsp of olive oil and cook onions. Add garlic, mix bell pepper, cumin, pepper & salt. Add potatoes and cook for 5 minutes. While potatoes are still cooking, add in beef, raisins and tomato sauce. Cook 5 more minutes, or until liquid is reduced and potatoes are fully cooked. Then add olives and serve.
